Calcium Citrate in Fortified-Food Applications

چکیده
alcium is a key mineral in the human body, necessary for the normal growth and development of the skeleton as well as for teeth, nerve, muscle and enzyme functions. As the body’s calcium absorption capabilities reduce with age, it is vital for older individuals to have a sufficient calcium intake. Calcium requirements vary throughout an individual’s life and for different population groups. However, it is generally evident that a significant proportion of the population in Western countries fails to achieve the recommended calcium intakes. Poor dietary habits are seen to be responsible for this situation, especially when fastfood consumption dominates much of the population’s menu. Various studies, including “The Mineral Fortification of Foods,” published in 1999 by Leatherhead International Calcium Citrate in Fortified-Food Applications

Bioavailability and Solubility of Different Calcium-Salts as a Basis for Calcium Enrichment of Beverages
Background: When usual calcium consumption patterns were analysed most people in the U.S. and Europe consume less than the recommended daily allowance. Supplements and fortified foods offer alternative and additional sources of calcium to traditional food. Calcium carbonate is the most common supplement but it is less soluble in water and, therefore, not suitable for enrichment of beverages. Ne...
متن کاملCalcium Fortification in Dairy Products
However, feasibility of calcium addition has to be considered as milk products represent a complex food matrix from the technological point of view. This challenge drives mineral salt suppliers such as Jungbunzlauer to offer not only one product but rather a range of different calcium salts (tricalcium citrate and calcium lactate gluconate) to be able to align with food manufacturers’ applicati...
متن کاملMineral Intake in Urban Pregnant Women from Base Diet, Fortified Foods, and Food Supplements: Focus on Calcium, Iron, and Zinc.
In the Chinese national nutrition surveys, fortified foods were not investigated separately from the base diet, and the contribution of fortified foods to micronutrients intake is not very clear. This study investigated the diet, including fortified foods and food supplements, of urban pregnant women and analyzed the intake of calcium, iron, and zinc to assess the corresponding contributions of...
متن کاملCalcium and Calcium Salts.
Calcium is the most abundant mineral in the body. Bones and teeth contain approx. 99% of calcium. Calcium exists in both plant and animal foods. The best source of calcium is milk. Indian Council of Medical Research (ICMR) recommends 600-800 mg/day of calcium which increases to 1200 mg/day in pregnant and lactating mothers. Inadequate calcium intake for longer duration is responsible for osteop...
